Hello, I would like for participants to complete my survey when they are at work…ideally I would like to randomly ping them at some point throughout the day like an ESM. How do I set that up in Prolific?

Welcome to the forums 
I think you can do this by setting up a longitudinal study
where in the first part you ask permission, and working times of the participants.
You can then send them an email using the format
ProlificID @email.prolific.co
with the workplace study link. There have been times (or a time)when email has not been instantaneous so you may wish to test it, but when I have sent email to my participant account I have got it right away.
You can pay them by a second after completion study using a custom allowlist, or via bonuses on the first study as long as you pay fairly and tell them how you are going to pay, for what, up front (in the first study).

Hi Tim, this is very helpful, thank you! This is my first time using Prolific so I’m still figuring it out. Based on the information that you sent it sounds like I can use the first study as the consent and determine their work schedules. This first study will also collect their unique prolific ID which I can then use to send them a link to the second study during work hours? I just want to ensure I’m understanding the process, thanks again!

Yes. I think you have understood that entirely correctly.
The only think that I am a little bit worried about is that the email “ping” may not go through to the participants immediately. It may well do, and did when I tried it but there has been one report once in the past of email not be instantaneous. If you could therefore schedule the time of the second study at the time the first then that would be 100% okay. But I am 99% sure the email will work.
